Chicken Fajita Recipe

CHICKEN FAJITAS
Ingredients
½ cup vegetable oil
½ cup apple cider vinegar
6 oz Mexican beer (or substitute with water or chicken broth)
¼ cup lime juice
1 tablespoon of chili powder
2 teaspoons of cumin
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon oregano
1 tablespoon table sugar
1 lb chicken breast or thigh
Method
Mix all ingredients and marinate the chicken for about 4 hours.
Preheat the grill to about 400°F and lightly oil the grates to prevent sticking.
Remove the chicken from the marinade and let the excess drip off. Grill for 16 to 18 minutes, turning occasionally, until both sides are lightly charred and the thickest part reaches 165°F.
Transfer the chicken to a cutting board and let it rest for 10 minutes before slicing it into strips.
While the chicken rests, place a flat-top griddle or cast-iron skillet on the grill. Add the peppers and onions and cook for 8 to 10 minutes, stirring occasionally, until tender and slightly charred.
