CHICKEN FAJITAS

Ingredients

  • ½ cup vegetable oil

  • ½ cup apple cider vinegar

  • 6 oz Mexican beer (or substitute with water or chicken broth)

  • ¼ cup lime juice

  • 1 tablespoon of chili powder

  • 2 teaspoons of cumin

  • 1 tablespoon onion powder

  • 1 tablespoon paprika

  • 1 teaspoon oregano

  • 1 tablespoon table sugar

  • 1 lb chicken breast or thigh

Method

Once your chicken has marinated, it's time to prepare your vegetables. Slice your desired bell peppers and onions into thin strips and coat them with a tablespoon of vegetable oil and garlic salt. Preheat your grill to about 400°F (medium-high) and oil the grates to prevent sticking.

Remove the chicken from the marinade, allowing the excess to drip off, and grill it for about 16-18 minutes, flipping occasionally. The goal is to achieve a nice char on both sides. When the chicken reaches a safe internal temperature, set it aside to rest for 10 minutes before slicing it into bite-sized strips.

While the chicken rests, place a flat iron skillet on the grill and add your peppers and onions. They should cook for about 8-10 minutes until they’re tender and slightly charred.
