Dude's Chicken Rice Recipe

CHICKEN SOUP

Ingredients

  • 1 tablespoon avocado oil or olive oil

  • 6 cloves of garlic, minced

  • 1 yellow onion, diced

  • 2 large carrots, thinly sliced

  • 2 celery stalks, roughly chopped

  • 1 tablespoon fresh grated ginger

  • 1 teaspoon turmeric

  • 6 cups chicken broth

  • 1 shredded rotisserie chicken

  • 1 teaspoon rosemary

  • 1 teaspoon thyme

  • ½ teaspoon salt

  • Black pepper to taste

  • ½ cup white rice

  • ⅔ cup frozen peas

Method

1. Put a big pot on the stove and turn the heat to medium-high. Pour in some oil, and once it’s hot, add the minced garlic, diced onion, sliced carrots, and chopped celery. Cook for a few minutes until the onion becomes translucent.

2. Next, introduce the grated ginger and turmeric into the pot. Let these cook for about 30 seconds to release their aromatic flavors.

3. Pour in the chicken broth and then add the shredded rotisserie chicken, fresh rosemary, thyme, salt, and black pepper. Allow the soup to come to a gentle bubble.

4. Once the soup is bubbling comfortably, add the white rice. Make sure the chicken is well submerged by stirring it down into the liquid.

5. Reduce the heat a bit and let the soup cook with a lid for about 20-25 minutes, allowing the rice to fully absorb the flavors and cook through.

6. When your timer goes off, mix in the frozen peas. If you find that the soup isn’t as liquidy as you’d like, feel free to add another cup of broth. Everyone has their preference when it comes to soup consistency!
