FRIED TURKEY

When it comes to holiday feasts, nothing quite compares to the towering, golden-brown glory of a fried turkey. This recipe is not only delicious but also surprisingly simple to prepare. Ingredients

  • 15 lbs whole turkey

  • 3 tbsp salt (for the dry brine)

  • 2 tbsp unsalted butter

  • 2 cups chicken broth

  • 1 tbsp creole seasoning

  • 1 tbsp black pepper

  • 1 tbsp paprika

  • 1 tbsp thyme

  • 1 tbsp rosemary

  • 1 tbsp sage

  • 1 tbsp avocado oil

  • 3 gallons peanut oil (for frying)

Method

  1. Pat down the thawed turkey with a paper towel to remove any moisture.

  2. Rub 3 tablespoons of salt all over the turkey to create a dry brine. Place it in the fridge uncovered for 24-48 hours.

  3. Two hours before frying, melt the unsalted butter and mix it with the chicken broth and creole seasoning. Fill your injector with this mixture and inject it into the breasts, thighs, legs, and wings of the turkey for maximum flavor.

  4. Combine black pepper, paprika, thyme, rosemary, and sage to create a dry rub. Cover every inch of the turkey with this seasoning blend, then set it back into the fridge, uncovered.

  5. Carefully heat the peanut oil to 350°F in your deep fryer. Slowly lower the turkey into the oil (this can take a few minutes) and place a lid on the fryer. Cook for 50-60 minutes while maintaining the oil temperature.

  6. Once your turkey reaches an internal temperature of 165°F, remove it from the oil and let it sit for about 10 minutes before slicing.
