FRIED FISH
Ingredients
4 fish filets
1 cup cornmeal
1 cup all-purpose flour
2 tbsp yellow mustard
1 egg
1 tbsp creole seasoning
1/2 cup hot sauce
1 tbsp paprika
1 tbsp black pepper
1 tbsp salt
1 tbsp chili powder
Vegetable oil for frying
Method
In a large bowl, whisk together the yellow mustard, egg, Creole seasoning, hot sauce, paprika, black pepper, salt, and chili powder.
Add the fish fillets and toss until they are evenly coated. Cover the bowl and refrigerate for 15 minutes.
While the fish marinates, heat the vegetable oil in a large, heavy-bottomed pot to 350°F.
Combine the flour and cornmeal in a separate bowl. Remove the fillets from the marinade one at a time, letting the excess drip off, then coat each piece thoroughly in the breading mixture.
Carefully lower the coated fillets into the hot oil. Fry in batches so the pot does not become overcrowded or the oil temperature drops too far.
Cook for about 4 to 6 minutes, turning as needed, until the coating is golden and crisp and the fish reaches an internal temperature of 145°F.
Remove the fish from the oil and place it on a wire rack or paper towel-lined plate. Let it rest for about 2 minutes before serving.
