Easy One-Pot Ground Beef Stroganoff

This easy ground beef stroganoff cooks the beef, sauce, and egg noodles in one pot. Beef broth, Dijon mustard, Worcestershire sauce, and milk make the sauce without requiring a separate pot for the noodles. It is straightforward, filling, and easier to clean up than traditional versions.

What You’ll Need

  • 1 tablespoon olive oil

  • 1 pound ground beef

  • 1 small yellow onion, minced

  • 2 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 3 1/2 cups beef broth

  • 1 tablespoon Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • 1/2 tablespoon (1 1/2 teaspoons) garlic powder

  • 1/2 tablespoon (1 1/2 teaspoons) oregano

  • 1 teaspoon thyme

  • 8 ounces uncooked egg noodles

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 3/4 cup milk

How to Make Ground Beef Stroganoff

  1. Brown the beef and onion. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the ground beef, minced onion, and minced garlic. Cook until the beef is browned and the onion is soft and translucent. Ground beef should reach an internal temperature of 160°F. Drain any excess grease if needed.

  2. Add the flour. Sprinkle 2 tablespoons flour over the beef. Stir until no dry flour remains and cook for about 30 seconds.

  3. Make the sauce. Pour in 3 1/2 cups beef broth. Add 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 1/2 teaspoons garlic powder, 1 1/2 teaspoons oregano, and 1 teaspoon thyme. Stir and bring the liquid to a boil.

  4. Cook the noodles. Add 8 ounces uncooked egg noodles and reduce the heat slightly. Cover the pot and cook for 5 to 7 minutes, uncovering it to stir occasionally. The noodles are done when they are tender.

  5. Finish with the milk. Remove the pot from the heat. Stir in 3/4 cup milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix until the milk is fully incorporated and the sauce is creamy.

Don’t Screw This Up

Drain the beef if the pot has a lot of grease. Too much grease will leave the finished sauce oily.

Bring the broth to a boil before adding the noodles. The noodles need hot liquid to cook properly.

Stir the noodles while they cook. Uncover the pot a few times and stir so they do not stick to the bottom.

Remove the pot from the heat before adding the milk. Follow the order given instead of boiling the milk with the noodles.
