POT ROAST
Ingredients
Cooking spray
1 onion, sliced
1 (2 ½ pound) boneless beef chuck roast
Salt and pepper to taste
¼ cup all-purpose flour
1 package dry beef gravy mix
1 package ranch dressing mix
1 package dry Italian-style salad dressing mix
½ cup water (or as needed)
5 whole peeled carrots (optional)
Method
Lightly coat the inside of the slow cooker with nonstick cooking spray.
Spread the sliced onions evenly across the bottom.
Pat the roast dry with paper towels, then season it generously with salt and black pepper. Coat all sides of the roast with flour, shaking off any excess.
Place the roast on top of the onions.
In a separate bowl, whisk together the beef gravy mix, ranch seasoning, Italian dressing mix, and water. Pour the mixture evenly over the roast.
Add the carrots around the sides of the roast, if using.
Cover and cook on low for about 8 hours, or until the roast is tender enough to pull apart easily with a fork.
Taste the gravy and adjust the seasoning before serving.
