SMOKED CHICKEN WINGS
Ingredients
5 lbs Chicken Wings
2 cups Hot Sauce
2 cups Italian Dressing
½ cup Soy Sauce
½ cup Worcestershire Sauce
Method
Combine the marinade ingredients, then pour the mixture into a large resealable bag with the chicken wings. Press out as much air as possible, seal the bag, and toss until the wings are evenly coated.
Refrigerate the wings for at least 3 to 4 hours. For more flavor, let them marinate overnight.
Preheat the smoker to 275°F. Add a chunk of cherry wood and hickory wood to the hot coals, or use your preferred smoking wood.
Remove the wings from the marinade and let the excess drip off. Arrange them in a single layer on the smoker rack.
Season the wings lightly with salt, black pepper, and garlic powder, followed by a thin coating of your favorite barbecue rub.
Smoke the wings for 1 hour, then flip them and add another light dusting of barbecue rub.
Continue cooking for another 30 to 60 minutes, until the skin is browned and the wings reach an internal temperature of at least 165°F.
Serve the wings as they are, or toss them in your favorite barbecue or wing sauce.
