ALFREDO SAUCE

Ingredients

  • 2 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 3 tablespoons all-purpose flour

  • 2 cups milk

  • ½ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • ½ cup shredded parmesan cheese

Method

Melt the butter in a medium saucepan over medium-high heat. Let it begin to bubble, but do not allow it to brown.

Add the garlic and cook for about 1 minute, stirring frequently, until fragrant.

Add half of the flour and stir until smooth, then mix in the remaining flour. Cook for about 30 seconds to remove the raw flour taste.

Slowly pour in the milk while whisking continuously to prevent lumps. Continue cooking and stirring until the sauce begins to thicken.

Season with kosher salt, black pepper, oregano, and basil.

Reduce the heat and stir in the Parmesan until it is fully melted and the sauce is smooth and creamy. Taste and adjust the seasoning before serving.
