Ingredients
Chicken
- 1/2 pound chicken breast or thigh
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1/2 teaspoon pepper
- 1 tablespoon cornstarch
Vegetables
- 1 onion
- 1 carrot
- 1 red bell pepper
Noodles and Sauce
- 500 grams rice noodles pre-cooked or cook based on package instructions.
- 3 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
Instructions
- Boil the noodles in water for a minute to soften them. Then, drain and rinse the noodles with cold water to prevent sticking and halt further cooking. Set aside.
- Combine all the sauces in a bowl and set aside.
- Begin by cooking the chicken in a hot wok or pan using a few tablespoons of oil. Cook for about 2 minutes or until just cooked through. Remove the cooked chicken and set it aside.
- Turn up the heat to high, as this is a stir-fry. Start by sautéing the onions, carrots, and peppers. Once the onions become translucent.
- Add a bit more oil to the pan to benefit the noodles, then add the lo mein noodles and cook for a minute. Introduce the cooked chicken and the prepared sauce, cooking for a few more minutes to ensure all the ingredients are evenly coated with the seasoning sauce.
- Taste and adjust the seasoning if needed. If you're satisfied with the flavors, it's time to dig in!
