Boil the noodles in water for a minute to soften them. Then, drain and rinse the noodles with cold water to prevent sticking and halt further cooking. Set aside.
Combine all the sauces in a bowl and set aside.
Begin by cooking the chicken in a hot wok or pan using a few tablespoons of oil. Cook for about 2 minutes or until just cooked through. Remove the cooked chicken and set it aside.
Turn up the heat to high, as this is a stir-fry. Start by sautéing the onions, carrots, and peppers. Once the onions become translucent.
Add a bit more oil to the pan to benefit the noodles, then add the lo mein noodles and cook for a minute. Introduce the cooked chicken and the prepared sauce, cooking for a few more minutes to ensure all the ingredients are evenly coated with the seasoning sauce.
Taste and adjust the seasoning if needed. If you're satisfied with the flavors, it's time to dig in!
