Combine Yellow Mustard, Eggs, Creole Seasoning, Hot Sauce, Paprika, Black Pepper, Salt, and Chili Powder in a large bowl.
Add fish filets then cover and let marinate in the fridge for 15 minutes.
In a large pot, heat vegetable oil on the stove to 350 degrees.
Combine Flour and Cornmeal in a separate bowl.
After the fish has marinated, add a filet one at a time to the bowl of dry ingredients to cover the filet in the flour and cornmeal. Set completed filets aside.
Carefully add the filets to the oil and cook until the internal temperature of the fish hits 145 degrees (about 5 minutes.)
Remove the cooked filets from the oil and let sit for 2 minutes before eating.
