Put a big pot on the stove and turn the heat to medium-high. Pour in some oil. When the oil is hot, put in garlic, onion, carrots, and celery. Cook for a bit until the onion turns see-through.
After that, add in grated ginger and grated turmeric. Cook them for about 30 seconds, so they release their flavors. Then, pour in chicken broth, put in the shredded chicken, rosemary, thyme, salt, and pepper.
Let the soup bubble up, and then add rice. Make sure the chicken is under the liquid by stirring it down.
Turn down the heat a bit and let the soup cook with a lid for 20-25 minutes, until the rice is completely cooked.
